Chocolate Chickpea Cookies, I am a little obsessed with these golden treats from our health program ~ here is the recipe.
1 can chick peas rinsed and drained.
1 cup of rolled oats or almond meal for a GF option (Adding more if required).
2 tsp real vanilla extract.
1/2 cup + 2 tbsp 100% peanut butter or almond butter.
1/4 cup of rice malt syrup, raw honey or maple syrup.1 tsp baking powder.
Pinch of himalayan salt.
Organic dark chocolate chips or a block of dark chocolate [ 85% ] chopped into chunks.
Preheat oven to 175 degrees, line baking tray with baking paper.
Combine all ingredients using food processor except choc chunks, stir in chocolate. Set dough aside in the fridge to set for approx 30 mins before rolling into balls.
Tip ~ wet hands as you roll them to prevent sticking. Bake for 10-15 or until golden.
